Description

This refreshing avocado pomegranate salad is brightened with lime and fresh herbs, perfect as a dip or topping.

Ingredients

Scale
  • 2 ripe avocados
  • 1 cup pomegranate seeds (about 1 medium pomegranate)
  • Juice of 2 limes
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Slice the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.
  2. Gently fold in the pomegranate seeds without mashing them.
  3. Squeeze fresh lime juice over the mixture to enhance flavor and prevent browning.
  4. Stir in red onion and cilantro until well combined.
  5. Season with salt and pepper to taste.
  6. Serve immediately with tortilla chips or as a topping for grilled chicken.

Notes

  • This salad is best enjoyed fresh, as the avocados can brown.
  • Try adding diced tomatoes for extra flavor.
