- 2 cups fresh strawberries, sliced
- 1 cup strawberry-flavored gelatin
- 1 cup boiling water
- 1 cup cold water
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 package (8 oz) cream cheese, softened
- 2 cups crushed graham crackers
- 1/2 cup melted butter
- 1/4 cup granulated sugar
- Fresh strawberries for garnish
- Whipped cream for topping
Instructions
- Prepare the Base Layer:
- Mix crushed graham crackers, melted butter, and granulated sugar in a bowl.
- Press the mixture into the bottom of a 9×9 inch pan to form an even crust.
- Refrigerate while preparing the other layers.
- Prepare the Strawberry Layer:
- Dissolve the strawberry gelatin in boiling water.
- Add the cold water and stir until combined.
- Refrigerate until the mixture starts to thicken slightly.
- Prepare the Cream Layer:
- Beat the cream cheese until smooth.
- In a separate bowl, whip the heavy cream with vanilla extract and powdered sugar until soft peaks form.
- Combine the whipped cream with the cream cheese, folding gently until well mixed.
- Assemble the Layers:
- Spread half of the cream layer over the graham cracker crust.
- Add a layer of sliced strawberries.
- Pour the slightly thickened strawberry gelatin over the strawberries.
- Refrigerate until the gelatin is set.
- Add the remaining cream layer on top of the set gelatin.
- Top with whipped cream and garnish with fresh strawberries.
Notes
- Make sure the gelatin is slightly thickened, not fully set, before pouring over the strawberries to avoid it penetrating the cream layer.
- For a firmer base, bake the graham cracker crust at 350°F (175°C) for 8-10 minutes, then let it cool before layering.
- You can adjust the sweetness by altering the amount of sugar in the whipped cream or the base layer.
