Description

Ingredients

  • 2 large apples (such as Honeycrisp or Gala)
  • 3 tablespoons maple syrup
  • 1 ½ tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh thyme leaves (plus more for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel carrots and cut into 2-inch diagonal slices. Core and slice apples into wedges.
  3. In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, salt, and pepper.
  4. Toss carrots and apples with the glaze in a large bowl until evenly coated.
  5. Arrange on a parchment-lined baking sheet in a single layer.
  6. Roast for 25–30 minutes, flipping halfway, until carrots are tender and edges are caramelized.
  7. Remove from oven, sprinkle with fresh thyme, and serve warm.
