- 2 lbs carrots
- 2 large apples (such as Honeycrisp or Gala)
- 3 tablespoons maple syrup
- 1 ½ tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh thyme leaves (plus more for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Peel carrots and cut into 2-inch diagonal slices. Core and slice apples into wedges.
- In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, salt, and pepper.
- Toss carrots and apples with the glaze in a large bowl until evenly coated.
- Arrange on a parchment-lined baking sheet in a single layer.
- Roast for 25–30 minutes, flipping halfway, until carrots are tender and edges are caramelized.
- Remove from oven, sprinkle with fresh thyme, and serve warm.
