Description
A warm and comforting soup perfect for using up leftover turkey.
Ingredients

- 6 cups chicken or turkey broth
- 1 onion, chopped
- 2 stalks celery, chopped
- 2 carrots, chopped
- 2 cups leftover turkey or rotisserie chicken, shredded
- 1 bay leaf
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- Oil for sautéing
Instructions
- Heat oil in a large pot over medium heat.
- Add onion, celery, and carrots and sauté until softened, about 5 minutes.
- Add turkey or chicken and cook for another 2 minutes.
- Pour in broth and add the bay leaf, then bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- Stir in parsley and season with salt and pepper to taste.
- Serve hot in bowls and enjoy the warm, comforting flavors.
