Description

A warm and comforting soup perfect for using up leftover turkey.


Ingredients

Scale
  • 6 cups chicken or turkey broth
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 2 cups leftover turkey or rotisserie chicken, shredded
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Oil for sautéing

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add onion, celery, and carrots and sauté until softened, about 5 minutes.
  3. Add turkey or chicken and cook for another 2 minutes.
  4. Pour in broth and add the bay leaf, then bring to a boil.
  5. Reduce heat and let simmer for 20 minutes.
  6. Stir in parsley and season with salt and pepper to taste.
  7. Serve hot in bowls and enjoy the warm, comforting flavors.
