Key Ingredients for White Bean and Kale Soup

When it comes to crafting the perfect white bean and kale soup, choosing the right ingredients is essential to create a bowlful of warmth and nutrition. Each component plays a vital role in delivering flavors that dance on your palate.

  • White Beans: Cannellini or great northern beans are my go-to choice. Their creamy texture provides the soup with a lovely base while offering a hearty dose of protein. If you’re short on time, canned beans work beautifully—just be sure to rinse them to reduce sodium.

  • Kale: Fresh kale brings brightness and crunch. I recommend using lacinato or curly kale for the best results, as they hold their shape well during cooking. You can also substitute with spinach if needed, but keep in mind spinach wilts down more easily.

  • Vegetables: Onions, garlic, and carrots are essential for building a rich flavor foundation. Sauté them until they become fragrant, inviting that delicious aroma into your kitchen.

  • Vegetable Broth: Homemade or store-bought vegetable broth serves as the flavorful base for our soup. Opt for low-sodium versions if possible, allowing you to control the saltiness of the dish better.

  • Spices and Herbs: Fresh thyme and bay leaves enhance the soup’s aromatic profile, while a touch of red pepper flakes adds a subtle kick. Adjust according to your taste preferences to make it truly yours.

With these carefully selected ingredients, your white bean and kale soup will not only be nourishing but a delightful way to embrace cozy meal moments.

Adding Protein

Picture this: the aromatic scent of garlic sizzling in olive oil, mingling with the subtle earthiness of kale. It’s a delightful memory that keeps you coming back for seconds. Choose Your Beans Wisely

Using dried beans requires a bit more planning, but the flavor is unmatched. If you opt for dried white beans, soak them overnight for easier cooking. Canned beans are a quick alternative—just rinse them well to reduce sodium levels.

Broth Matters

A good broth is the foundation of a delicious soup. Homemade stock enhances the depth of flavor in your white bean and kale soup. If you’re short on time, look for low-sodium store-bought options.

Don’t Skimp on Seasoning

Season your soup as it cooks, tasting along the way. A splash of vinegar or a squeeze of lemon juice at the end adds brightness that balances the hearty ingredients.

Timing is Key

Kale takes time to soften, especially in this soup. Add it towards the end of cooking, allowing it to wilt without losing its vibrant color and nutrients.

Garnish Smartly

A sprinkle of fresh herbs or a drizzle of olive oil before serving elevates the dish. It’s a simple step that makes your white bean and kale soup look as good as it tastes.

Embrace these tips, experiment with your own twists, and enjoy the satisfying process of making this comforting staple!

Description

A hearty and healthy soup made with Cannellini beans and kale, perfect for a comforting meal.

Ingredients

Scale
  • 2 T olive oil
  • 2 medium onions, chopped small
  • 2 T minced garlic (or less if you’re not a garlic fan)
  • 2 tsp. Italian Herb Seasoning (contains oregano, basil, marjoram, thyme and rosemary)
  • 2 (15 oz.) cans Cannellini beans (see notes)
  • 1 (14 oz.) can petite diced tomatoes with juice
  • 8 oz. finely chopped kale, washed if needed (see notes)
  • 5 cups vegetable broth
  • 4 fresh sage leaves, or 1/2 tsp. dried rubbed sage
  • Parmesan rind to add flavor (optional)
  • freshly shaved Parmesan, to garnish (optional)

Instructions

  1. Heat the oil in a large heavy frying pan; add the onions and cook 4-5 minutes or until they are just starting to brown.
  2. Add the garlic and Italian Seasoning and cook 1-2 minutes more, being careful not to then put onions and garlic into the slow cooker.
  3. While the onions are cooking use an immersion blender or food processor to puree the Cannellini beans with the juice, keeping them a little chunky if you prefer. (If you’re using freshly-cooked beans I would add about 1/4 cup water.)
  4. Finely chop the kale (cutting away thick center ribs if you have them) and wash kale in the salad spinner if you’re using garden kale.
  5. Put the pureed beans, chopped kale, vegetable stock, canned tomatoes and juice, and sage leaves (or dried sage) into the slow cooker with the onion mixture.
  6. Add one or two pieces of Parmesan rind if desired for extra flavor.
  7. Cook 4 hours on high or 8-10 hours on low.
  8. Serve the soup hot, with strips of Parmesan shaved over if desired.
